Pork and shrimp dumplings

Ingredients

  • 30 won ton wrappers, 8 cm (3 in.) in diameter, thawed
  • 60 ml (1/4 cup) frozen small green peas (optional)
  • 1 pouch SUWONG garlic spare ribs sauce mix
  • 45 ml (3 tbsp.) peanut butter

Filling:

  • 340 g (3/4 lb.) lean ground pork
  • 115 g (1/4 lb.) raw shrimp, peeled and deveined
  • 15 ml (1 tbsp.) soy sauce
  • 10 ml (2 tsp.) mirin* (optional)
  • 10 ml (2 tsp.) toasted sesame oil
  • 10 ml (2 tsp.) sugar
  • 1 ml (1/4 tsp.) pepper
  • 1 egg white
  • 22 ml (1½ tbsp). cornstarch
  • 45 ml (3 tbsp.) fresh coriander, chopped

Directions

  1. In a large bowl, combine all filling ingredients.
  2. Place a small amount of filling in the centre of each won ton wrapper.
  3. Top with a green pea and gather the wrapper around the filling to form a packet.
  4. Without overlapping them, place dumplings in a lightly greased bamboo or metal steamer.
  5. Steam for about 5 minutes or until filling is cooked through. Repeat until all dumplings are cooked.
  6. In the meantime, prepare the SUWONG garlic spare ribs sauce mix according to package instructions, and add peanut butter.

* Mirin is a seasoned, sweet sake found in the Asian foods section, often next to the soy sauce and rice vinegar. It adds delicious flavour to the dumplings.
