Vegetable couscous

Ingredients

  • 1 pouch SUWONG fried rice seasoning
  • 500 ml (2 cups) cauliflower florets, finely chopped in food processor to the texture of couscous
  • 30 ml (2 tbsp.) vegetable oil
  • 1 red onion, chopped
  • 1 clove garlic, minced
  • 5 ml (1 tsp.) fresh ginger, minced
  • 250 ml (1 cup) snow peas, julienned
  • 1 red pepper, julienned
  • 1 stalk celery, finely chopped
  • 1 carrot, grated
  • 500 ml (2 cups) cooked couscous
  • 1 hard-boiled egg, chopped*
  • 1  green onion, chopped

Directions

  1. Mix SUWONG fried rice seasoning with 5 ml (1 tsp.) water and set aside.
  2. In a large saucepan of boiling water, blanch cauliflower for 2 minutes. Drain and set aside.
  3. In a wok or large skillet, heat oil over high heat and sautée onion, garlic and vegetables for 2 minutes.
  4. Add couscous, fried rice seasoning and cauliflower. Mix well until cooked through.
  5. Sprinkle with chopped egg and green onion. Serve immediately.

* To cook hard-boiled eggs, place eggs in a saucepan of boiling water. Cook 10 minutes then rinse thoroughly in cold water.
