Oriental cod and broccoli stir fry

Ingredients

  • 675 g (1½ lb.) cod or other firm white fish*, cut into 2.5-cm (1-in.) cubes
  • 1 pouch SUWONG Oriental stir fry mix
  • 125 ml (1/2 cup) water
  • 30 ml (2 tbsp.) vegetable oil
  • 1 clove garlic, finely minced
  • 1 onion, coarsely chopped
  • 1 L (4 cups) broccoli florets and stems (peeled)
  • 250 ml (1 cup) carrots, julienned
  • 30 ml (2 tbsp.) chopped chives

Directions

  1. In a large, shallow dish, dissolve contents of the packet of SUWONG Oriental stir fry mix in water.
  2. Add fish and mix thoroughly.
  3. Cover and marinate in the refrigerator for 1‑2 hours.
  4. Remove fish from marinade, and set marinade aside.
  5. In a skillet, heat half the oil over high heat and cook fish for about 5 minutes or until just opaque. Keep warm.
  6. Wipe out the skillet and heat remaining oil. Add vegetables and 15 ml (1 tbsp.) water.
  7. Cover and cook vegetables, tossing often, until just tender.
  8. Add remaining marinade to skillet and cook 2 minutes until thickened.
  9. Serve Oriental cod and broccoli stir fry over jasmine rice** and sprinkle with chives.

* You can substitute the cod with halibut or salmon.
** Jasmine rice is a type of white rice. You could also use basmati rice or Arborio rice.
